Acorn Squash with Raisin Apple Stuffing

Nothing says fall like this acorn squash recipe with apples, cinnamon, and raisins.

Ingredients

1 acorn squash

1 apple (approx 1/2 pound)

4 tbsp raisins

1/2 tsp cinnamon

2-4 tbsp nuts (for topping)

 

Instructions

1. Cut squash in half. Remove seeds. Place in baking dish cut side down. Pour 1/4 inch boiling water into dish. Bake at 350 degrees for 30 minutes.

2. Combine apples, raisins, and cinnamon. Stuff squash. Return to oven and bake for ~40 minutes.

3. Top with nuts. Enjoy!

Notes: I only used 2 tbsp raisins, but more would have been better. Squash isn't super soft. There might be a quicker way to cook it fully.
