Air Fried Rice
Air fried rice is amazing. It crisps up and tastes MUCH better than Chinese take-out rice.
The trick to fried rice is using rice that has been previously cooked. Older rice is dryer, improving the texture of the final dish. Rice that is 2 or 3 days old is preferable, but 1 day old rice is also fine. In a pinch, you can spread freshly cooked rice on a baking sheet to allow the moisture to escape and throw it in the freezer to cool it off.
Yield: 1 serving
Ingredients
1 cup cooked rice (1-3 days old)
2/3 cup frozen veggies (or more)
1/4 cup onion
1 tsp vegetable oil (see if it is okay to reduce this)
1 tbsp soy sauce
Instructions
1. Mix ingredients in bowl
2. Air fry at 360 degrees for 20 minutes. Be sure to mix throughout cooking--otherwise, the top will burn and the bottom won't fry.
