Almond Butter Brownies- Version 2
These brownies are fudgy and delicious--my favor of the almond butter brownies.
Servings: 16
Ingredients
1 cup dates
3/4 cup cocoa powder
1 cup almond buter
1/3 cup milk
1 flax egg (1 tbsp ground flax + 3 tbsp water)
1 tsp vanilla
1.5 tsp baking powder
1/2 tsp salt
Instructions
1. Preheat oven to 350 degrees.
2. Combine ground flax with water to form flax egg. Let sit for 5 minutes to thicken.
3. Combine ingredients.
4. Grease 9 x 9 inch baking pan. Spread brownie batter.
5. Bake 15-18 minutes.

These brownies are more cake-like
Ingredients
1/2 cup almond butter
3/4 cup dates
3 eggs
1/2 cup cocoa powder
2 tsp vanilla
1/2 tsp baking soda
1/8 tsp salt
Instructions
1. Combine ingredients.
2. Spread into 12 inch square baking pan.
3. Bake at 350 degrees for 18-20 minutes or until toothpick comes out clean.
Nutrition Information (based on 18 servings): 72 calories, 4.7g fat, 0.5g saturated fat, 5.6g carbs, 1.1g fiber, 3.9g sugar, 2.6g protein

Notes: These brownies are good but a bit cake-like. Try reducing eggs to see if that helps. I used 3 mini loaf pans, but these brownies rise A LOT. I probably should of used much larger pans--maybe 2x the size.
Almond Butter Brownies- Version 3
These brownies have a crisp top.
Servings: 9-12
Ingredients
6 tbsp cocoa powder
1 cup almond butter
11 tbsp dates
1/2 cup oats
1.5 tsp baking soda
1/8 tsp salt
Instructions
1. Preheat oven to 325 degrees.
2. Process oats in a food processor until fine.
3. Stir together all ingredients.
4. Add 2 tbsp of milk if needed
5. Transfer to pan. Bake 15 minutes.

Notes: These are my second favorite of the almond butter brownies I tried. Enough batter to fill 4 mini loaf pans. I like the crisp top. Most brownie-like of all of these recipes. As you chew it though, it sort of tastes sticky--like almond butter. I like that the dough is moldable (cookie dough consistency), so that you can scale the recipe up/down and use any pan

Also Tried- (1) Joyful Healthy Eats Almond Butter Brownies- need 3x the sweetener listed, not my favorite but good, taste a bit grainy from the almond flour, check for doneness 10 min early, I cut salt in half (2) Chocolate Covered Katie's workout brownies- not even close to right. way too much applesauce/banana. don't taste enough like brownies
