Almond Ice Cream

Description

Yield: ~4-5 scoops

 

Ingredients

1/2 cup sliced almonds

3/4 cups heavy cream

3/4 cups milk

8 dates

1/16 tsp fine sea salt

3 egg yolks

1/8 tsp almond extract

 

Instructions

1. Toast almonds

2. Add milk, cream, dates, and salt. Simmer 5 minutes.

3. Temper eggs.

4. Cook until coats spoon (170 degrees).

5. Remove from heat and let steep 1 hour.

6. Strain

7. Add almond extract

8. Chill

9. Pour into ice cream maker
