Apple Berry Crisp
The crisp topping makes this dessert feel like the ultimate treat, but it's healthy enough to eat for breakfast.

Ingredients
Filling:
1/2 apple (~3/4 cup), cut about the size of blueberries
2 tbsp berries (I used blueberries)
1 tsp apple juice
3/4 tsp chia seeds
1/8 tsp cinnamon
1/4 date
Topping:
1/4 cup oats
2 tbsp puff cereal
4 tsp walnuts or pecans
1/8 tsp cinnamon
2.25-3 tsp applesauce
3/4 tsp melted coconut oil
3/4 date
Instructions
1. Cut apple into pieces. Mix with other filling ingredients.
2. Combine oats, puff cereal, walnuts, and cinnamon.
3. Mix together applesauce, coconut oil, and date. Pour over oat mixture.
4. Place apple mixture in ramekin. Top with oat mixture.
5. Bake at 350 degrees for 20 minutes.

Notes: There is a generous amount of topping. 3/4 of this amount would be standard. The topping doesn't really crisp up.
Notes 2: I like the pop of berries in the pie. Cooks quickly, but the topping isn't verry crispy.
