Apple Muffins

When apples are in season, give these muffins a try.

Yield: 12 mini muffins

 

Ingredients

1.5 cups flour

1/2 cup dates

1 tbsp baking powder

1 tsp cinnamon

2/3 cup apple juice

1/3 cup canola oil

1 egg

1.25 cup apples

 

Instructions

1. Preheat oven to 375 degrees.

2. Add wet to dry ingredients. Fold in apples.

3. Bake 20 minutes.

Notes: Okay. Flour aftertaste. Decent but not craveable.
