Apple Rice Stuffing
This stuffing recipe is full of a variety of fruits and vegetables.
Servings: ~12-16
Ingredients
1.5 cups rice (cooked in 1.5 cups apple juice and 1.5 cups of water)
1 apple (or 1/2 apple)
1 pear (or 1/2 pear)
1 cup onion (original recipe called for 1/2 red onion)
2 cups brussel sprouts (original recipe only called for 1)
2 carrots (optional)
1/3 cup oatmeal
1/2 cup raisins (or 1/4 cup raisins)
1/4 cup smashed/sliced almonds
1/4 cup sunflower seeds
1/4 tsp thyme
pinch salt
Instructions
1. Cppk rice in apple juice and water mixture.
2. Saute vegetables and fruit.
3. Combine all ingredients.
4. Bake at 350 degrees for 30-40 minutes. (This gives it a crisp topping)

Notes: The original recipe called for 4 cloves of garlic, but it was way too much, so I decided to omit it from my version of the recipe. It is pretty sweet, which is why I suggested lower quantities of apple/pear/raisins above. I also reduced the amount of apple juice that the rice is cooked in from 2 cups.
Notes 2: I like how crunchy it is.
