Avocado Macaroni and Cheese

Avocado adds extra creaminess to this cheese sauce

Servings: ~4 small servings

 

Ingredients

5 oz dry pasta (~2 cups penne)

1 clove garlic (I didn't use)

1 avocado

1-2 tsp lime juice (original recipe called for 1 tbsp)

1/6 cup cilantro (opt- I used it, but it isn't essential)

1 tbsp coconut oil

1 tbsp flour

1 cup milk (Original recipe called for 1/2 cup, but I increased the amount)

1 cup pepper jack cheese (I used cheddar but would like to try pepperjack next time)

 

Instructions

1. Cook pasta.

2. Blend avocado, garlic, lime juice, cilantro, salt, and pepper.

3. Melt coconut oil in saucepan. Whisk in flour. Slowly add milk. Add cheese.

4. Pour avocado and cheese sauce over macaroni (Be sure macaroni is drained well first).

Note: Tastes better cold. Don't taste cheese when warm. However Texture is cheesier when cold. I used cheddar cheese but would like to try pepperjack next time for more flavor.
