Avocado Potato Salad

Lots of vegetables jazz up this potato salad, giving it textural variety and crunch.

Ingredients

1 pound potatoes

1 avocado

1 tbsp lime juice

1/4 tsp salt

1/8 tsp cayenne

1/8 cup green onions

1/2 cup cucumber

1/2 cup mushrooms

1/2 cup celery

1.5 radishes

1/2 plum tomato (optional- I didn't use this since it was originally from a different recipe)

 

Instructions

1. Cook potatoes.

2. Blend avocado, lime juice, and seasoning. (Make sure you do this first prior to tossing with the potatoes, so that it is easy to combine.)

3. Toss ingredients. Garnish with green onion. Enjoy.

Other Variations:

1 pound potatoes, 1 avocado, 2 tbsp Dijon (opt), 2 tbsp red onion, 2 tbsp fresh dill, 1/2 cup cucumber, 1 tsp lemon juice, 1/8 tsp salt (Source: Detoxinista)

 

Notes: If you don't eat this the day of, the avocado will start to brown.
