Lemon Basil Avocado Soup

This avocado soup is extremely creamy.

Ingredients

2 avocados

1 cup lite coconut milk

1 cup broth

zest of 1 lemon

2 tbsp lemon juice

1 tbsp white wine vinegar (might be too much. potentially better without it)

1 tbsp basil (can't taste it)

2 tsp shallots (can't taste it)

1.5 tsp kosher salt

 

Instructions

1. Blend.

2. Chill 2 hours.

3. Taste for salt/lemon. Enjoy!
