Baked Onion Rings
Ingredients
1 sweet onion (I used ~11.44 oz)
1.5 cups cornflakes
1/2 cup breadcrumbs
1 egg
1/2 cup buttermilk
1/4 cup flour
1/8 tsp cayenne pepper
salt, pepper
Instructions
1. Preheat oven to 450 degrees.
2. Pusle together cornflakes and breadcrumbs until fine. Transfer to bowl.
3. Whisk egg, buttermilk, flour, cayenne, salt, and pepper.
4. Dip onion rings in egg mixture and dredge in cornflake mixture.
5. Spray baking sheet with oil. Place in oven for 2 minutes. Remove from oven, and arrange onion rings on sheet. Bake for 16 minutes, turning once.
Notes: This recipe is more work to make.
Onion Rings
These onion rings are simple to make and taste delicious.
Yield: 1-2 servings, approximately 15 onion rings (9 large, 4 small, 2 minature)
Ingredients
2 center rings from an onion (about 3.66 oz of onion rings)
2 tbsp flour
1 egg white (You will use all of it--You might be able to use both the yolk and the white.)
7 tbsp of flake cereal, ground (I used Uncle Sam cereal. You will use all of it)
Instructions
1. Preheat oven to 350 degrees.
2. Cut 1/2 inch onion rings out of center of onion. Separate.
3. Grind cereal into bread crumb consistency. Season with salt and pepper.
4. Put egg white and flour in separate bowls. Season each with salt and pepper.
5. Dip onion rings into flour then egg then cereal crumbs.
6. Bake 20-30* minutes. Flip. Bake 5-15* minutes more.

Notes: The original recipe didn't call for flour--that was my addition to help the flake cereal adhere. The original recipe also called for much more egg whites, which wasn't needed. Do not reheat in the microwave.
Notes 2: I slightly prefer this recipe over the second one. I think this one is slightly less messy to make.
