Bean Soup

Try out this hearty bean soup packed full of healthy vegetables.

Ingredients

2 cups dry beans

1 pound beef (or chicken)

2 onions

2 carrots

2 celery stalks

2 zucchini

2 cups corn

2 cups peas

2 cups diced peppers

4 cups frozen spinach

5 14 oz cans tomatoes

2 tbsp tomato paste

2 tbsp chili powder

oregano, parsley, basil

 

Instructions

1. Boil beans until soft.

2. Saute onion. Add beef. Cook. Add carrot, celery, and zucchini. Cook until soft. Add tomato paste.

3. Add tomatoes, beans, and spices. Simmer 30 minutes. Add remaining vegetables.

 

Notes: Next time, try making it with chicken
