Berry and Banana Baked Oatmeal
This baked oatmeal has a medley of fruits and nuts, adding a nice crunch.
Yield: 6-8 ramekins
Ingredients
2 cups oats
3 tbsp dates
1 tsp baking powder
2 tsp cinnamon
1/4 tsp salt or less (1/2 tsp called for in the recipe was too much)
1 cup strawberries
1/2 cup blueberries
2 cups milk
1 egg
2 tsp vanilla
1 banana, sliced
Instructions
1. Preheat oven to 375 degrees.
2. Mix dry ingredients with half of nuts/berries.
3. Add oat mixture to baking dish. Arrange remaining nuts/berries on top. Add bananas. Pour in milk mixture.
4. Bake 40 minutes.
