Berry Banana Quinoa-Oat Breakfast Bake

This is a great make-ahead breakfast--and it is packed full of berries.

Yield: ~8 ramekins

 

Ingredients

1/2 cup uncooked quinoa

1/2 cup uncooked steel cut oats

3 bananas, sliced

2 cups berries

2 cups milk

2 eggs

1.5-2 dates, mashed

1 tsp vanilla extract

1/2 tsp cinnamon

dash salt

 

Instructions

1. Rinse quinoa.

2. Preheat oven to 375 degrees.

3. Lay half of fruit on bottom. Spread grains on top. Top with remaining fruit.

4. Whisk wet ingredients. Pour liquid mixture on top slowly.

5. Bake 60 minutes.

Notes: I love the berries and banana flavor. Not sure if I love the quinoa flavor. It would probably taste better with just steel cut oats. Tastes better cold than warm.
