Berry Iced Yogurt
This ice cream is packed full of berry flavor.
Servings: ~4 small servings
Ingredients
Part 1 Ingredients
14 oz blueberries (about 2.5 cups)
Part 2 Ingredients
2 egg yolks
7.5 dates
200g Greek yogurt (~11 tbsp)
Part 3 Ingredients
1 banana
1/4 tsp cinnamon
2 tbsp lemon juice
200g yogurt (~14 tbsp)
Instructions
1. Simmer blueberries 5 minutes. Cool.
2. Whisk egg yolks with dates and Greek yogurt. Transfer to saucepan and gently warm, stirring continuously, for 10 minutes.
3. Mash banana, cinnamon, lemon juice, and yogurt.
4. Stir all mixtures together.
5. Pour into ice cream maker. Enjoy!
Notes: Simmering the blueberries causes liquid to escape, which helps color and flavor the ice cream. I tried this recipe with wild blueberries. It has lots of berry flavor (might not need that much). Icy texture after freezing.

Notes: Icy consistency. Not very sweet. I forgot to use the cinnamon. Not as intense blueberry flavor as the recipe above. I used wild blueberries and Greek yogurt.
