Black Bean Corn Salsa

This corn salsa is quick and easy to throw together.

Ingredients

1.5 cups corn (about 9 oz fresh)

1.5-2.25 cups fresh tomatoes

1.5 cups cooked black beans

1/3 cup red onion

1 jalapeno, diced

1 scallion, chopped (I omitted)

1.5-2 limes, juiced

2 tbsp cilantro (I omitted)

salt and pepper

1 medium avocado (you can easily double or omit)

 

Instructions

1. Combine all ingredients and enjoy.

 

Notes: The sweetness of the corn and the tenderness of the beans go very well together.
