Blueberry and Peach Cobbler
This peach cobbler is full of flavor and it has a delicious, crumb-cake like topping.

Ingredients
Filling
1 peach
2 tbsp blueberries (or more)
3/4 tsp lemon juice
3/8 tsp cornstarch
1/16 tsp cinnamon
1/32 tsp nutmeg
Topping
2 tbsp almond flour
1.5 tsp flour
1/2 tsp coconut oil
1 date, mashed
1/8 tsp vanilla
Instructions
1. Combine filling ingredients. Crumble topping over filling.
2. Bake at 350 degrees for 30-35 minutes.

Notes: Might be able to get away with using only half of topping. Crumb topping tastes great. The original recipe called for 1 hour of baking time, which was too much. The original recipe also called for 1 tsp coconut oil, but I cut it down.
Notes 2: Filling wasn't super sweet, but maybe that was because my peach wasn't sweet
