Blueberry Banana Baked Oatmeal

This baked oatmeal is the perfect fluffy consistency.

Yield: 6-8 ramekins

 

Ingredients

2 cups quick oats

1 tsp cinnamon

1 tsp baking powder

1/8 tsp salt (original recipe called for too much)

1.5 cups milk

1/4 cup date syrup

1 egg

1 tsp vanilla

1 cup mashed banana

1.25 cups blueberries

2 tbsp walnuts, for topping

 

Instructions

1. Mix wet into dry.

2. Sprinkle with walnuts.

3. Bake at 350 degrees for 30-45 minutes.

165 calories, 4.2g fat, 29.7g carbs, 4.7g fiber, 11g sugar, 4.3g protein

Notes: Lots of berry and banana flavor. Very sweet. This is probably the max banana I would use. Next time, try it without the dates, since you probably don't need them.
