Blueberry Bars

These granola bars use fresh blueberries.

Yield: ~16 granola bars

 

Ingredients

2.5 cups oats

1 tsp baking powder

1/2 cup dates

1/4 cup hemp seeds

1 cup mashed banana

2 flax eggs

2 tbsp nut butter

2 tbsp lemon juice

1 tsp vanilla

1.5 cups blueberries

 

Instructions

1. Preheat oven to 350 degrees.

2. Pour wet over dry. Fold in blueberries.

3. Bake 25-35 minutes. Let cool. Enjoy!

 

Inspired by Simply Quinoa

 

Notes: Original recipe called for 1.5 cups oats and 1 cup of quinoa, but I like it better with just oats instead.

 

Notes 2: Lemon and blueberry flavor. A little bit odd in bar form but tastes good. Hemp seeds are not essential
