Blueberry Crumble Bars
These blueberry crumble bars taste decadent but are healthy enough to have for breakfast.
Yield: ~9 bars
Ingredients
Crust and Crumb Topping:
1.25 cups quick oats
1/2 cup flour
8 dates
1/4 cup coconut oil (Try subbing this for mashed bananas)
2 tbsp apple or orange juice
Filling:
1.5 cups blueberries
1.5 dates
1 tbsp lemon juice
1 tbsp flour
Instructions
1. Preheat oven to 375 degrees.
2. Pulse crust ingredients until dry and crumbly
3. Press at least half of mixture onto bottom of prepared dish, leaving aside 3/4 cup for topping.
4. Combine filling ingredients and pour onto crust.
5. Top with reserved crumb topping.
6. Bake 30-35 minutes.
