Blueberry Oatmeal Bake with Crisp Topping
The crisp topping is delicious and helps set this baked oatmeal apart.
Yield: 4 ramekins
Ingredients
Oatmeal:
1.25 cups oats
3 dates
1 2/3 cups milk
1 egg
1 tsp vanilla (I doubled by accident)
1/4 tsp almond extract (I doubled by accident)
Topping:
1/3 cup sliced almonds
1/3 cup oats
1/3 cup dates
4 tsp coconut oil (reduced from original recipe)
1 tbsp flour
1/8 tsp cinnamon
12 oz berries
Instructions
1. Preheat oven to 350 degrees.
2. Pour wet into dry.
3. Combine topping (except berries).
4. Sprinkle berries and crumb topping over oatmeal.
5. Bake ~30 minutes.

Notes: Makes a lot of topping (double what I would have expected. Tastes almost like a dessert because of the pecan pie style crisp topping. Slight taste of almond extract. I couldn't taste the blueberries when it was warm but could taste them once cold. Tastes good both warm and cold.
