Blueberry Pancakes

These blueberry pancakes are fluffy and delicious.

Yield: ~4 pancakes

 

Ingredients (Version 1)

1/2 banana, mashed

1 egg

1 tbsp lemon juice

1 tbsp coconut oil, melted

3 tbsp milk (or water)

6 tbsp flour

1/4 tsp baking soda

pinch salt

1/2 cup blueberries

Ingredients (Version 2)

1 banana

1 egg

1/4 cup oats, ground

1/4 tsp baking powder

blueberries

 

Instructions

1. Blend batter ingredients together.

2. Fold in berries.

3. Cook. Enjoy!

 

Inspired by Savory Lotus Fluffy Lemon Blueberry Pancakes (Version 1) and Simply-Delicious-Food (Version 2)

Notes (Version 1): Original recipe called for lemon zest, but it didn't have enough lemon flavor to classify. Taste much better as blueberry pancakes. I doubled the blueberry pancakes from the original recipe because more were needed. Can't taste the banana or the lemon. Perfect consistency. Can omit the coconut oil if you want, but might be more fluffy with the coconut oil in.

Notes (Version 2): Was originally a banana pancake recipe, but I think it would make better blueberry pancakes.
