Braised Leeks with Thyme and Lemon

This recipe treats leeks as the main veggie, rather than using them as an onion-like element. Braising them mellows out their flavor, while the lemon juice brightens it up.

Ingredients

8 leeks

6 sprigs fresh thyme

1 cup stock

4 tsp lemon juice

lemon zest (optional)

 

Instructions

1. Preheat oven to 375 degrees.

2. Split leeks lengthwise.

3. Cook leeks cut-side down in heavy bottom skillet.

4. Place in baking dish. Pour stock on top. Cover with foil. Bake 30 minutes. Remove foil for the last 10 minutes.

5. Season to taste. Stir in lemon zest and juice.

Notes: I doubled the amount of lemon juice. The lemon zest is not necessary.
