Breakfast Birds Nests

If you like roasted tomatoes, you will love this dish. The trick is cooking the egg perfectly, so that the yolk is still runny in the middle. (You may need to experiment with your oven.)

Ingredients

1 large tomato

1 egg

 

Instructions

1. Preheat oven to 400 degrees.

2. Slice off top of tomato and scoop out inside. Bake 5 minutes at 400 degees.

3. Crack egg into tomato. Sprinkle with salt and pepper. Bake 7 minutes at 400 degrees. Broil for 3-5 minutes. (Watch carefully to make sure it doesn't overcook)

 

Notes: You can also make a bell pepper version. First roast the pepper cut-side down for 15-20 minutes at 450 degrees. Then add the egg. Bake at 400 degrees for additional 7-9 minutes. (It will be soft boiled by 10 minutes.)
