Broccoli/ Mixed Vegetable Stir Fry

This Asian stir fry is versatile and delicious.

Ingredients (Option 1)- Yield: 3-4 servings

1.75 cups onion

2.75 cups broccoli

1 bell pepper (2 cups)

4 oz mushrooms (1.5 cups)

1 tbsp soy sauce (I recommend starting with 1.5-2 tsp next time)

Ingredients (Option 2)- Yield: 4 servings

1 cup onion

1.75 cups broccoli

1 carrot (1 cup)

1 cup cauliflower leaves

2 cups zucchini

3 1/8 oz mushrooms (1 cup)

2 tbsp soy sauce

 

Instructions

1. Stir fry vegetables. Add soy sauce.

 

Notes: I invented this recipe. There is no magic in the quantities listed. This is just what I had on hand.
