Cabbage Soup

This cabbage soup is nutritious and delicious.

Ingredients

1 head cabbage (~10 cups)

1 carrot

1 cup celery

2 leeks (or 2 cups onion)

4 cups carrots blended with 2 cups stock

8 cups more stock

5 cups kale or fresh spinach

seasonin, to taste

 

Instructions

1. Cover and simmer for 30 minutes. Enjoy!

 

Notes: The carrot puree adds a nice flavor to the broth. Cut the ca bbage smaller. You can put the carrots and celery in the stock before the cabbage and kale. Not very filling. It might be a good idea to add more broth.
