Candy Apple Macaroons

This twist on macaroons is naturally sweetened with apples.

Yield: 16 macaroons

 

Ingredients

1.25 cups unsweetened coconut

1/2 Granny Smith apple, shredded

1/4 Granny Smith apple, blended

1/6 cup almond butter

1.5 tbsp almond flour

1/4 tsp vanilla extract

1/8 tsp almond extract

pinch salt

 

Instructions

1. Preheat oven to 325 degrees.

2. Combine ingredients. Form into balls, and bake on parchment mat for ~15 minutes.

Notes: Lots of apple flavor. Can also taste the lemon extract. I'm not sure how much I like the texture and macaroons in general though.
