Cantaloupe Gazpacho

This cantaloupe gazpacho is a refreshing way to start a meal.

Ingredients

1 cantaloupe (I used ~11 cups)

1 cucumber (I used ~1 pound)

2 tbsp red onion

1/4-1/2 tsp salt (less than the original recipe called for)

1/3 cup water

1/2 cup olive oil

fresh mint (for garnish)

 

Instructions

1. Blend all ingredients except olive oil.

2. Drizzle olive oil with motor running.

3. Serve with fresh mint
