Carmely Cookies
These chewy cookies are adapted from a chocolate chip cookie recipe.
Yield: ~12-16 cookies
Ingredients
1 cup flour
1 cup dates (don't reduce this)
1 egg
1/4 cup melted coconut oil
1.5 tsp cornstarch
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips (I didn't try the recipe with this quantity, but I would recommend using chocolate chips)
Instructions
1. Preheat oven to 350 degrees.
2. Mix flour, cornstarch, baking soda, and salt.
3. Beat dates and coconut oil. Add vanilla and eggs. Add flour mixture.
4. Chill dough for 20 minutes. Bake ~15-20 minutes
