Carrot Cake- Version 1 (great spices)
Ingredients
1.75 cups oats
1.5 cups carrots
1/4 cup raisins + 5 dates + 1/2 cup water
1/2 banana
1 cup milk
1/2 cup raisins
1/2 cup walnuts
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp cloves
Instructions
1. Preheat oven to 350 degrees.
2. Grind oats into flour. Add baking powder, baking soda, and spices.
3. Blend raisins and dates with water. Add banana and milk. Add wet to dry. Fold in carrots, raisins, and walnuts.
4. Bake 20-25 minutes.

Ingredients
1 cup flour
1.5 cups carrots (cooked and pureed into 3/4 cup)
1 cup shredded carrots
1 egg
1/4 cup raisins in 2 tbsp boiling water
1 banana + 1 tbsp applesauce
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
Instructions
1. Preheat oven to 350 degrees.
2. Puree raisins and boiling water. Add carrots. Puree. Add banana and egg.
3. Mix dry ingredients.
4. Add wet ingredients.
5. Bake 35-40 minutes.

Ingredients
1 cup flour
1 cup shredded carrots
1/4 cup applesauce (or mashed bananas)
1/2 + 1/8 cup water
3/4 cup raisins
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
Instructions
1. Preheat oven to 375 degrees.
2. Combine dry ingredients.
3. Pour water into saucepan. Add raisins, nutmeg, and cinnamon. Bring to boil and simmer 5 minutes. Puree.
4. Put carrots in bowl. Pour liquid mixture on top. Add applesauce. Mix wet with dry.
5. Bake 45 minutes - 1 hour.

2. Mash banana. Stir in carrot, dates, raisins, and eggs.
3. Add wet to dry.
4. Bake at 350 degrees for 20 minutes.
