Orange-Mango Cheesecake

This cheesecake recipe tastes delictable. Enjoy it on its own or added to ice cream.

Yield: 16 mini cheescakes

 

Crust

1/2 cup almonds (not tested with almond flour)

1/2 cup coconut

1/4 cup dates (~6)

1/8 tsp salt

 

Orange Layer

1 cup cashews, soaked

1/4 cup orange juice (plus zest)

4 dates

2.67 tbsp melted coconut oil

4 tsp lemon juice

pinch salt

 

Mango Layer

1/3 of orange layer

1 cup fresh mango

 

Instructions

1. Place crust into muffin tins. Freeze.

2. Blend orange layer together. Pour 2/3 of it  into the cheesecake bases. Freeze.

3. Add mango to the remaining 1/3. Blend. Pour on top of cheesecake.

4. Freeze half an hour and enjoy.

Note: I tried a crust made from 4 parts almond flour and 1 part dates. It was sweet enough. But it did not solidify like a crust. Not sure if the problem was that I didn't pack the almond flour in or that you can't use almond flour. The orange layer doesn't taste like orange. It tastes like the plain layer. I took the recipe for the base layer from the blueberry cheesecake recipe on the same website because it tasted the same and was slightly healthier.

Chocolate Cheesecake (Zucchini Version)

This recipe is chocolatey and tastes like ice cream.

Yield: 12-16 mini cheesecakes

 

Cheesecake Filling

2 cups cashews, soaked 4-6 hours

1 cup zucchini

1/2 cup cocoa powder

30 dates

10-16 tbsp water or date water (however much you need to blend)

1 tbsp vanilla (opt)

 

Instructions

1. Blend ingredients together. Freeze. Enjoy!

Note: The zucchini seems to make it less icy and give it a better texture once frozen. Original recipe also had a crust makde with 2 cups pecans, 2 tbsp coconut oil, 1/4 cup cocoa powder, 6+ dates, and 1/8 tsp sea salt. I did not try the crust.

Chocolate Cheesecake (Banana Version)

If you like chocolate, you will love this frozen treat!

Yield: 16 mini cheesecakes

 

Crust (I didn't try this)

1 cup oats

1 cup dates

 

Cheesecake Filling

2 cups cashews, soaked

2-3 bananas (I used 2.5)

1/4 cup melted coconut oil

40 dates + 1/3 cup date water (Since bananas are used for sweetness, you can probably reduce the dates by ~8)

1/2 cup cocoa powder

1 tsp vanilla

 

Instructions

1. Blend ingredients together. Freeze. Enjoy!

Note: The original recipe only called for half of the cocoa powder because it alternated between chocolate and vanilla layers. I thought the vanilla layer was way to sweet, which is why I doubled the cocoa and made the whole thing chocolate.

Plain Cheesecake

This frozen dessert has a classic cheesecake flavor.

Yield: 8 mini cheesecakes

 

Cheesecake Filling

1.25 cups cashews, soaked

3.5 tbsp coconut oil, melted

6 dates (I used 4, since that is what I had)

1 banana

1/3 cup full fat coconut milk

1/2 tsp vanilla

1/4 tsp sea salt

2 tbsp lemon juice

 

Instructions

1. Blend ingredients until smooth.

2. Freeze. Enjoy!

Note: The original recipe was called a banana cream pie, but it tastes more like a cheesecake. Lots of lemon flavor. Can't taste banana.
