Cauliflower and Mushroom Casserole

The mushrooms and cheese combine to create a decadent tasting cheesy dish.

Yield: ~8 servings

 

Ingredients

1 pound mushrooms

1 head cauliflower

1 onion

2 cloves garlic

1 tbsp sea salt

1/2 tsp fine salt

pepper

2 eggs

1/3 cup cheddar cheese

1/2 cup Greek yogurt

1/3 cup Parmesan cheese (half this is probably enough)

 

Instructions

1. Preheat oven to 425 degrees.

2. Spread cauliflower on baking sheet. Sprinkle with coarse salt and pepper. Roast 30 minutes, turning once.

3. Saute onions and mushrooms. Cook 4-5 minutes. Stir in garlic. Add cauliflower.

4. Combine eggs, cheddar cheese, and Greek yogurt. Add cauliflower and mushroom mixture. Return to baking dish. Sprinkle with Parmesan and cover with foil. Bake at 350 degrees for 15 minutes. Remove foil. Bake 10 minutes more.

Notes: Original recipe called for baking it with foil for 30 minutes. I adjusted the recipe to 15 minutes, because the cauliflower came out too soft.
