Cauliflower, Cabbage, and Kale Salad with Orange Citrus Dressing

This salad is colorful salad is delicious paired with the citrus dressing.

Ingredients

Salad:

1/2 head cauliflower, grated

2 cups red cabbage, grated

2 cups kale, thinly sliced

1 cup raisins

1 cup walnuts

3.5 cups diced butternut squash

Dressing:

2 tbsp almond butter

2 tbsp hemp seeds

1/4 cup orange juice

1 tsp apple cider vinegar

 

Instructions

1. Roast butternut squash in oven.

2. Toss together cauliflower, cabbage, and kale. Add raisins and walnuts. Add roasted butternut squash.

3. Mix together dressing ingredients. Pour on top of salad.

Notes: I did not test to ensure that the dressing measurements match the salad measurements. You might want to leave out the hemp from the salad dressing (difficult to blend) or use less peanut butter (for more orange flavor). Butternut squash is optional and was not called for in original recipe.
