Cauliflower Falafel

These falafel have a very authentic, strong spice flavor. You would never guess that they are made from cauliflower.

Yields: ~10-12 falafel balls

 

Ingredients

1 cup pureed cauliflower (approx 172 grams)

1/2 cup almond slivers, pulsed

3 tbsp coconut flour

2 eggs

2 tbsp fresh parsley

1 tbsp cumin

1/2 tbsp coriander

1 tsp sea salt

1/2 tsp cayenne pepper

1 clove garlic

 

Instructions

1. Puree raw cauliflower to form 1 cup. Add remaining ingredients. Form into balls.

2. Bake at 400 degrees for ~15 minutes. Flip. Bake ~5 minutes more.

Notes: Yummy. Do not dry when reheated. Don't taste coconut flour or almonds.
