Cauliflower Fried Rice
If you like fried rice, try this version made from cauliflower.
Ingredients
1 head cauliflower (approximately 30 oz and 6 cups grated)
1 onion
8 cloves garlic (yum! really adds to the flavor)
1 cup peas
1 cup corn
up to 4 eggs (optional- didn't add much to the flavor)
4 tbsp soy sauce
Instructions
1. Saute garlic and onions (2-3 minutes).
2. Add peas and carrots (3-5 minutes).
3. Stir in scrambled eggs, cauliflower, and soy sauce (5-7 minutes).
