Cauliflower Hummus

You would never guess that this hummus is made from cauliflower.

Yields: 3 cups

 

Ingredients

1 head cauliflower

2 tbsp cumin

1.5 tbsp melted coconut oil

4 cloves garlic, halved

1/2 cup tahini

juice from 2 lemons (I'd recommend using less than this. Maybe, start with juice from 1 lemon)

3/4 cup water

1/4 cup olive oil

 

Instructions

1. Preheat oven to 450 degrees.

2. Mix cauliflower, cumin, coconut oil, and garlic.

3. Bake 20-30 minutes.

4. Let cool 10 minutes.

5. Process until smooth in food processor.

6. Add tahini, lemon juice, water, and olive oil.

 

Notes: I baked the cauliflower for 30 minutes, and it burned a little. The recipe only called for 1/4 cup water, but that wasn't enough, so I increased it. I used a 3 pound cauliflower. I couldn't taste the garlic.
