Cauliflower Macaroni and Cheese

The cauliflower subs for pasta in this cheese dish

Servings: ~4

 

Ingredients

1 head cauliflower

2 tbsp coconut oil

3 tbsp flour

2 cups milk

1 clove garlic, minced

2 cups grated cheddar cheese

1 pinch cayenne pepper

2 egg yolks (I didn't use these)

 

Instructions

1. Preheat oven to 350 degrees.

2. Steam cauliflower until tender.

3. Melt coconut oil in saucepan. Whisk in flour and cook 1 minute, stirring constantly. Whisk in milk, garlic, and 1 cup reserved cauliflower cooking liquid. Cook 7-10 minutes, or unti thickened, whisking constantly.

4. Remove from heat. Stir in cheese, cayenne pepper, and egg yolks. Fold in cauliflower.

Note: The original recipe called for nutritional yeast. I removed this, because I like the pure cheese flavor better. I also removed the breadcrumb topping. I forgot to whisk in the reserved cooking liquid. You might be able to get away with less cheese in the sauce or using more cauliflower for the amount of sauce.
