Cauliflower Mashed Potatoes

This dish uses cauliflower to lighten up mashed potatoes.

Servings: 2-3

 

Ingredients

8 oz cauliflower

3 Yukon Gold potatoes (8-10 oz)- I used Russet

1/4 cup milk- I used vanilla almond milk

3/16-1/4 tsp salt (reduced from original recie)

black pepper

1 tbsp fresh chives (optional)

 

Instructions

1. Steam/boil cauliflower and potatoes until soft.

2. Mash ingredients, and stir in milk, salt, pepper, and chives.

 

Inspired by Weight Watchers, Cooking Light

 

Note: Approximately half mashed cauliflower and half mashed potatoes. I used almond vanilla milk, and I did not taste the vanilla (which is good).
