Cauliflower Pizza Crust

This nutritious pizza crust is made from cauliflower.

Yield: 2-3 servings

Yield: 4 4.25-inch diameter pizza rounds

Ingredients

1/2 head cauliflower

1 egg

1/8-1/4 cup shredded mozzarella cheese

3 tbsp nutritional yeast (opt)

1 tsp dried oregano

1 tsp dried basil

salt, pepper

Instructions

1. Preheat oven to 450 degrees

2. Grate cauliflower. Microwave ~3 minutes. Let cool.

3. Squeeze out excess liquid. Combine with other ingredients.

4. Bake on parchment paper ~10 minutes. (The crust will stick to aluminum foil. I sprayed the parchment paper and the crust slipped right off.)

Topping Ideas: ~4 tbsp tomato sauce, 6 tbsp shredded mozzarella cheese, 3/4 cups frozen spinach, 2-4 plum tomato, 1/4 bell pepper, onion slices, 1/8 shredded chicken breast (~1.5 oz)

Notes: I omitted the cheese, and it did not hold together well. It will be easier to flip if you make many little crusts instead of one big crust.
