Cheesy Potato Pancakes

These taste like decadent cheesy mashed potatoes. However, they are full of healthy ingredients, including cauliflower.

Yields: ~12 potato pancakes

 

Ingredients

3 cups potatoes, diced (~2 russet potatoes or ~2 cups mashed)

3 cups chopped cauliflower (~1 cup mashed)

2/3 cup Greek yogurt

salt, pepper

1/2 cup cheddar cheese

4 scallions

 

Instructions

1. Preheat oven to 450 degrees. Place baking sheet lined with a silicon mat in the oven to preheat.

2. Cook potatoes and cauliflower until tender.

3. Mash together potatoes, cauliflower, Greek yogurt, salt, and pepper.

4. Dollop mashed potato mixture onto pan. Sprinkle with cheddar cheese and scallions.

5. Bake ~20 minutes.

Note: These are not crispy. They have a soft mashed potato center.

 

Note 2: These are tasty. Even the mashed potato cauliflower mixture is good on its own.
