Cherry Ice Cream
If you like cherries, give this cherry ice cream recipe a try.
Ingredients
1.25 cups cherries (3/4 cup for blending and 1/2 cup for mix-ins)
2 egg yolks
1 tbsp cornstarch
1 cup milk
1 cup coconut milk
8 dates
1/4 tsp almond extract (I omitted)
Instructions
1. Puree 3/4 cup of cherries.
2. Blend milk, coconut milk, and dates. Heat on stove.
3. Temper egg.
4. Whisk some of warm milk mixture into cornstarch.
5. Add tempered egg and cornstarch to saucepan.
6. Cook 3-5 minutes.
7. Remove from heat. Add almond extract and pureed cherries.
8. Cool
9. Pour into ice cream maker. Enjoy!

Notes: Good texture. Not red. Could use more cherries blended in. Flavor needs a bit of work.

Ingredients
2 egg yolks
3 cups coconut milk (I used lite)
1 cup cherries (to blend in, measured when frozen)
extra cherries to mix in (if desired)
1/4 tsp vanilla (I might have forgotten to put this in)
Instructions
1. Puree cherries.
2. Heat coconut milk on stove.
3. Temper egg.
4. Add tempered egg to saucepan.
6. Cook until it thickens slightly. (Do not boil, or else it may separate.
7. Remove from heat. Add vanilla extract and pureed cherries.
8. Cool.
9. Pour into ice cream maker. Enjoy!

Notes: Slightly icy/watery consistency. Next time, I might trying a more full-fat coconut milk. Do not add chocolate chips, because it cannot stand up to the flavor. The original recipe called for 1/3 cup to 11 tbsp dates, but I didn't think it really needed it.
