Chicken a la Calabrese

This chicken has a salsa-like topping on top.

Ingredients

3.5-4 pounds bone-in chicken

1 onion

2 sweet peppers

3 cloves garlic, smashed

28 oz canned tomatoes

1/2 cup white wine (opt)

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flackes

1/4 cup fresh parsley

1/4 cup fresh mint

1 tsp thyme

1 tsp oregano

 

Instructions

1. Bake chicken at 450 degrees for 15 minutes.

2. Cook onion, peppers, and garlic in skillet. Add tomatoes, wine, salt, pepper, and red pepper flakes. Simmer for 10 minutes.

3. Stir in parsley, mint, oregano, and thyme.

4. Pour sauce over chicken. Reduce heat to 350 degrees. Cover and bake for an additional 25 minutes.

Notes: I omitted the parsley and used double the mint. However, I still did not taste the mint. (It was homegrown mint that wasn't bright green.)
