Chicken Curry with Bananas and Raisins

Bananas add a sweetness to this curry dish.

Ingredients

2 onions, sliced

2 garlic cloves

1 tbsp fresh ginger

1 pound chicken (boneless thighs or breasts- I recommend thigh, because when I used breast it was a bit dry.)

4 tsp curry

1 tsp coriander

1/2 tsp tumeric

1/2 tsp salt

pinch cayenne (I omitted)

2 tbsp raisins

1 can full-fat coconut milk

3/4 cup water (I didn't need to use any water)

juice of half a lemon

dash of fish sauce (optional- I omitted)

2 bananas, sliced

1/4 cup peanuts for garnish (They weren't essential for the dish)

 

Instructions

1. Saute onion. Saute ginger and garlic.

2. Saute chicken. Add spices.

3. Add raisins, coconut milk, and water.

4. Simmer until cooked through. (Be careful not to overcook.)

5. Add lemon juice. Add banana slices.

6. Serve with peanuts on top.
