Chicken Satay

This chicken satay has a peanut butter flavor and a bit of a kick.

Ingredients

3/4 pound chicken breast

1 clove garlic

2 tbsp soy sauce

1/2 tsp chile flakes (original recipe called for 1 tsp, but that was a bit too spicy for me)

2 tbsp peanut butter

1 tbsp tomato paste

6 tbsp pineapple juice

 

Instructions

1. Marinade chicken 30 minutes.

2. Put on skewers. Broil 5-10 minutes or grill.

Notes: Too spicy with 1 tsp chile flakes and not spicy enough with none. That is why I recommend using 1/2 tsp. Can taste the peanut butter. It tasted a bit dry with chicken breast. Not dry with chicken thigh. Plenty of sauce for amount of chicken. Delicious with coconut dipping sauce.
