Chicken with Mushroom-Marsala Pan Sauce

This mushroom-marsala sauce has the perfect blend of umami ingredients. Give it a try!

Ingredients

2.5-3.5 pounds boneless chicken

8 oz mushrooms (~4 cups)

1 shallot (~1/2 cup)

1 tsp fresh thyme

1 tsp flour

1 tbsp tomato paste

1 tsp soy sauce

1.5 cups Marsala

1 tbsp lemon juice

 

Instructions

1. Cook chicken in skillet. Remove from heat.

2. In the pan used to cook the chicken, saute the mushrooms. Add shallots and thyme. Cook 1 minute.

3. Add flour and tomato paste.

4. Slowly whisk in soy sauce and wine.

5. Remove from heat. Whisk in lemon juice. Season to taste with pepper.

6. Serve sauce on top of chicken.
