Tomato Spiced Chickpeas

This eggplant is stuffed with a tomato-based chickpea mixture.

Ingredients

1/2 cup onion

1/2 cup bell pepper

3/4 cup cooked chickpeas

14oz can diced tomatoes

1 garlic clove

1/2 tsp oregano

pinch allspice (opt)

two pinches cinnamon (opt)

1 dried bay leaf

 

Instructions

3. Saute onions and peppers. Add chickpeas, tomatoes, garlic and spices. Bring to a boil. Simmer, covered, for 20 minutes.

Note: Was originally a stuffed eggplant dish, but I liked the filling better.
