Chinese Braised Chicken with Dried Mushrooms

This chicken is flavored with dried mushrooms and star anise.

Ingredients

2.5 pounds bone-in chicken thighs

4 tbsp soy sauce, divided

2-3 scallions

5 slices of ginger the size of quarters (and then chopped finely)

8 shitake mushrooms, rehydrated (I used 1/2 oz)

1 cup shitake cooking liquid

1/4 cup dry sherry

2 tbsp honey, optional

1 star anise

 

Instructions

1. Marinate chicken with 2 tbsp soy sauce for 10-15 minutes.

2. Saute scallions and ginger until fragrant.

3. Brown chicken

4. Add 2 tbsp soy sauce, sherry, honey, star anise, rehydrated mushrooms, and mushroom soaking liquid.

5. Bring to a boil. Simmer 10-15 minutes, covered.

Notes: The recipe also called for 1 cup chestnuts, but I like it better without them. I didn't use the sherry (because I didn't have any) or the honey. Can taste the star anise but cannot tase the mushrooms very much.
