Chipotle Chicken and Rice Stuffed Peppers
These stuffed peppers have great flavor from the salsa.
Ingredients
1 bell pepper
1/2 onion
1/2 cup cooked shredded chicken
1/4 cup corn
1/4 cup cooked beans
1/4 cup salsa
1/2 cup cooked rice
1/4 tsp garlic
1/4 tsp cumin
1/8 tsp chili powder
Instructions
1. Bake peppers cut side down at 350 degrees for 20 minutes.
2. Saute onion. Add chicken, rice, salsa, corn, and beans.
3. Bake 20 minutes. Enjoy!
