Chocolate Banana Pie
This chocolate pie is rich and very chocolate-y. You would never guess that the ingredients are so healthy.
Yield: ~8 mini muffins
Ingredients
Crust (I did not make):
1 cup pecans
1 cup walnuts
1.5 cups dates or raisins
pinch salt
1/2 tsp vanilla
Filling:
2 bananas, blended
1/4 cup cashew butter
2 tbsp melted coconut oil
1/4 cup dates
1/4 cup milk
pinch salt
1/4 cup cocoa powder
Instructions
1. Blend crust ingredients. Press into pie crust. Freeze.
2. Blend filling ingredients. Set in fridge to thicken. Spoon into pie crust. Layer with sliced banana.
3. Refrigerate. Enjoy!

Notes: Yummy. Chocolatey (with a tad bit of casew butter flavor). I omitted the vanilla from the original recipe because I think it tastes better without it. I also omitted the sliced banana on the top, since I think this tastes better as a normal chocolate pie.
Notes 2: Very rich and chocolatey. Holds shape well. Very sweet. Prefer eating it as a normal chocolate pie--not topped with banana slices.
