Chocolate Frosting

This chocolate frosting is decadent and delicious--no one would ever guess that it is made from sweet potato.

Yield: Enough to Ice 12 mini cupcakes

 

Ingredients

1/3 cup sweet potato

1/8 cup unsweetened cocoa powder

1-3 dates (or more to taste)

1/4 cup milk or date soaking water

1/2 tsp PB (optional- I think it makes it taste better. 1 tsp is too much so I reduced it.)

 

Instructions

1. Combine ingredients. Enjoy.

1 can coconut milk, refrigerated (cream only--about 12 tbsp)

1/4 cup unsweetened cocoa powder

16-20 dates

4 tsp nut butter (I used cashew butter)

Notes: The original recipe was supposed to be fudge, but it works much better as frosting.

Chocolate Frosting

This chocolate frosting tastes just like store bought. You would never guess that it is healthy.

Ingredients

2 bananas

1/2 cup cocoa powder

1/8-1/4 cup coconut oil

6 Medjool dates

1/4 tsp salt

 

Instructions

1. Combine ingredients. Enjoy.

 

Notes: The original recipe called for 1/3 cup coconut oil (which was too much) and only 3 Medjool dates (which wasn't enough).
